chai spice bischochous
(makes about 30 cookies)
150 g eggs (3 large)
150 g granulated sugar (about 3/4 cup)
1/2 cup vegetable oil
1/4 cup water
3 tsp baking powder
560 g flour
chai sugar: 100 g granulated sugar (about 1/2 cup), 2 tsp cinnamon, 2 tsp ginger, 1 tsp cardamom, 1/2 tsp nutmeg, 1/2 tsp ginger, 1/2 tsp allspice, 1/4 tsp cloves
1. In a standing mixer with the paddle attachment, mix together eggs, sugar, oil and water. Add remaining ingredients. Wrap and chill dough for 2-4 hours, or overnight.
2. Preheat the oven to 350 and line 2-3 cookie sheets with parchment paper or a silpat.
3. Measure dough into 1 oz ball, and roll each ball into a 12" log. Bringing the ends of the log together, twist the line into a spiral, and lightly pinch to form a circle.
4. Bake for 30 mins, or until lightly golden brown. Once all cookies are baked, leave the cookies in the oven overnight to form a crunchy biscotti-like texture.
