(Makes 8)
Ingredients :
For the twinkies:
62.5 g cake flour
1/2 tsp baking powder
pinch of salt
150 g (3 whole) eggs, seperated
1/4 tsp cream of tartar
1/2 tsp vanilla
38 g sugar
For the filling:
82.5 g egg whites (about 3)
142 g sugar
225 g butter (2 sticks) cut into small cubes
3/4 c marshmallow fluff
salt
vanilla
Method:
For the twinkies: Spray a twinkie mold pan with baking pam, and preheat the oven to 350. Mix the dry ingredients (flour, baking powder, salt) and set aside. In a mixer with the whisk attachment, whip egg yolks and sugar until very light an doubled in size - about 2-3 minutes. In another bowl whisk the egg whites and cream of tartar to stiff peaks. Take a small amount of the whipped egg whites, and mix into the egg yolk and sugar to lighten the mixture. Fold the remaining egg whites into the egg yolks and sugar, then fold in the dry sifted ingredients. Bake 6 minutes, until springs to the touch.
For the filling: Whisk egg whites and sugar in a double boiler, until 140 degrees. Whisk in mixer until light and fluffy, about 5 minutes. Add in the butter and whisk on medium-high until smooth. Mix in mini marshmallows, salt and vanilla.
Using a piping bag and small star tip, make 3 holes in the bottom of the twinkies. Generously add filling.
