
oatmeal creme pies
(makes about 20 sandwiches)
Ingredients:
For the cookies:
200 g brown sugar (light or dark, I used light)
225 g butter, melted
1/3 c molasses
1/2 tsp vanilla
100 g eggs (2)
250 g all purpose flour
1 tsp baking soda
1 tsp cinnamon
pinch salt
2 cups rolled oats
For the filling:
82.5 g egg whites (about 3)
142 g sugar
225 g butter (2 sticks) cut into small cubes
3/4 c marshmallow fluff
salt
vanilla
Method:
For the cookies: Line cookie sheets with a silpat or parchment paper, and preheat the oven to 350. Mix together the dry ingredients and set aside. Cream butter, sugar and molasses for 3-5 minutes with a standing mixer and the paddle attachment. Add eggs, and mix on medium speed until incorporated. Fold in the dry ingredients, then the oats. Use a mini scoop (cookies will grow!) and scoop onto cookie sheet, leaving enough space in between each cookie (about 8/cookie sheet). Bake for 8 minutes.
For the filling: Whisk egg whites and sugar in a double boiler, until 140 degrees. Whisk in mixer until light and fluffy, about 5 minutes. Add in the butter and whisk on medium-high until smooth. Mix in mini marshmallows, salt and vanilla.

Using a piping bag and and large round tip, pipe filling onto one cookie, and sandwich with another cookie.
