pumpkin blondies

pumpkin white chocolate blondies

(makes one 9x9 pan, 9 2.5" squares)


224 g butter, melted (2 sticks)

200 g brown sugar (1 cup)

200 g granulated sugar (1 cup)

1 tsp vanilla

1 egg yolk

110 g canned pumpkin

250 g all purpose flour (2 cups)

1 tsp baking powder

1/2 tsp salt

2 tsp cinnamon

1/2 tsp all spice

1/2 tsp ginger

1/4 tsp nutmeg

pinch of cloves

130g white chocolate chips (approx 3/4 c)


1. Preheat the oven to 350, and prepare (1) 9x9 baking pan with parchment paper and/or baking PAM.

2. Whisk together melted butter, sugars and vanilla until smooth. Add egg yolk and pumpkin. Add remaining dry ingredients, and fold in white chocolate chips, careful not to overmix.

3. Bake for 30-35 minutes, until the top is lightly golden brown and the edges pull away from the sides of the pan.
